I have at the moment just the standart maps installed, and a few amxx plugins such as the "late join exp giver, etc". Does anyone has suggestions what plugins to put on my server and which maps?

The Top Ten AMXX Plugins running on NS servers are listed here. Crabmapmanager, DisplayRules, and Awards Display are non-game-altering and very popular. 
Btw, the post AFTER the above-mentioned one does NOT include NS v3.2 servers, as the NSSB doesn't parse for them yet.
